SILVER is an New American Brasserie with a distinctive new shine. Led by award-winning Chef, Ype Von Hengst, SILVER’s menu features contemporary American cuisine and healthier choices, influenced by the great brasseries from around the world. 

We specialize in offering a broad menu of contemporary favorites, seasonal specials, and healthier options, featuring ingredients from local farms and purveyors. 

Our bar menu features hand-crafted pre-prohibition style cocktails, local brews and American wines carefully curated to showcase the traditions of American wine makers.  

Open early until late, serving breakfast, lunch, dinner and late night brunch. SILVER offers the choices for how you live and a healthy dose of what you crave.

Giaimo has been a trailblazer in bridging the gap between tablecloth establishments and casual dining. In 1977 he introduced New American cuisine to Washington, DC with American Café, a combination restaurant-gourmet market offering freshly prepared, high-quality, innovative food at reasonable prices.

In 1989, Giaimo and his partner Ype Von Hengst opened the first Silver Diner in Rockville, Maryland transforming the traditional diner by introducing local sourcing, antibiotic-free meats, and an extensive selection of Flexitarian choices.

Today, Giaimo and Von Hengst have a nationally recognized, award-winning restaurant brand with 16 locations in the mid-Atlantic region.

Von Hengst has always had a passion for food. Born in the Netherlands, Von Hengst discovered his passion while cooking for his family at the age of seven.  He pursued a chef apprenticeship in Germany and then completed his studies at the Hotel Restaurant School in Holland.

Prior to co-founding Silver New American Brasserie and Silver Diner, Ype served as executive chef for American Cafe, executive and corporate chef for Restaurant Associates at Rockefeller Center in New York City, and partner and general manager for Dominique’s on Pennsylvania Avenue.

All the recipes and menus at Silver are created by Executive Chef Ype Von Hengst. With over 40 years of culinary experience in Europe and the United States, Chef Ype is known for creating flavorful, yet simple dishes using the freshest ingredients available.
